Spring is here and it is in full swing! The birds are chirping, the flowers are blooming and the sun is beaming, so what better time to get on the smoothie bowl bandwagon than with our Vanillabeet Berry Goodness Bowl.
Much like me, I am sure by now that your tastebuds are drooling with anticipation over the delicious cold foods that you may have passed up on more occasions than you would have liked during the chilly months of Winter (the pain is real!). But praise the warmth Gods, my Vanillabeet Berry Goodness Bowl is here – and it’s a beauty!

This season, I am skipping on the acai and saying “no, thank you” to kale, because I have found the next RED-hot superfood (get it?!). If you hadn’t guessed already from my incredibly, well thought-out pun, then you may have definitely already guessed it by the title of this recipe – its beetroot! Sure, we have been eating our beets for yonks; we eat them raw, roasted, pickled and juiced, but I think it’s time for this age-old wonder-vege to step up its game, and get a little face-lift.

“Why beetroot?”, I hear you ask? Well, beetroot is packed full of nutrients including folic acid, Vitamin A and Vitamin C. It also assists in purifying the blood, boosting immunity and it even increases energy levels – it just sounds too good to BEETROOT *ba-dum tsh* (I need help). Now, I know for some, there is only so much beet you can take! That is why I have devised a beetroot smoothie bowl recipe that tastes delicious, and quite frankly marries flavours that are polar opposites so well, so you can still reap all the wonderful health benefits without actually feeling like you’re eating a root vegetable. Because, as the renowned Homer Simpson once said, “You don’t make friends with salad”.
Without further ado – and any further puns – here is my Vanillabeet Berry Goodness Bowl – a perfect breakfast/snack/lunch/dinner/treat for the Spring Season.
Vanillabeet Berry Goodness Bowl 
Serves 1
Ingredients:
1 cup almond milk (or any liquid of your choice)
1 frozen banana (chopped) 
½ cup frozen berries
1 tbsp raw cacao powder
1 tbsp cacao nibs
1 tbsp flaxseed oil
1 tsp maca powder
Method:
1. In a blender add half the amount of frozen banana, almond milk, all dry ingredients and blend until smooth.

2. Add remainder of the frozen banana and blend until smooth. (doing the banana in two lots will help with blending into a thicker consistency and not having it stuck in the blender and needing more liquid)

3. Top with your choice of seeds, nuts, granola and fresh fruits. We have opted for gogi berries, cacao nibs, pepitas, buckinis, almond flakes and fresh banana.
